We're talking about text-based MUAs here, not GUI-based MUAs which
do that by default.

In the old days (let me grab my pipe... ouch, my back!) when you
having Internet access meant you could login to a Unix host and use
the mail/pine/elm/mutt program to read your email with, mail was
normally send as user at thatunixhost. When the ISP got *two* machines
to login to, suddenly there was a problem! So, they changed it so
that email came from user at theispdomain, and they needed a way to
let the email addresses produced by the local mail programs be
mapped on the @tehispdomain. It could have happened in the MUA, in
which case everybody needed to know how to configure mail/pine/elm/mutt,
or at the MTA, in which case the sysadmin who know who was on the
system anyway neeeded to know how. (Hmm... my pipe is empty, and
my audience is asleep!)
