Of course.  Don't your MUA's allow that?  I use at least three
different MUAs[*], and at least three different SMTP servers,
depending on which network and for what purpose I'm mailing.
And all of my outgoing messages wind up in the Sent folder on my
personal IMAP server[**].  That wouldn't happen if I was relying
on one of the SMTP servers to do it for me.

[*] Claws-mail and mutt (very occasionally Evolution) on FreeBSD,
Mail.app on MacOS.  Sometimes Thunderbird on Windows.
