That's probably a way.

I cvsup from a script, rather than the "make update" way.  I use
/usr/share/examples/cvsup/stable-supfile without modification,
and use the -h flag to csup on the command line, to select a
server.  So for me it was just a matter of tweaking my script to
use cvsup3.au instead of cvsup4.

I haven't found an exhaustive description of make.conf control
knobs that I was really happy with.  However, looking about on
my system, I see that I have this in make.conf (but don't use
it):

SUP=/usr/bin/csup
SUPFLAGS=-g -L 1
SUPHOST=cvsup3.freebsd.org
SUPFILE=/usr/share/examples/cvsup/standard-supfile
PORTSSUPFILE=/usr/share/examples/cvsup/ports-supfile

So I suspect that MASTER_SITE_OVERRIDE is more for finding
distfiles.  (You'd want SUPHOST=cvsup3.au.freebsd.org, of
course).
